According the most ancient Indian medical system – Ayurveda, breakfast should be a light, easily digestible and warm meal. It is said that warm foods will help re-kindle the digestive fire after a night of fasting.
Based on the Indian breakfast dish ‘Daliya’ made of broken wheat and germ, comes this Ayurvedic Chai Spiced Porridge, bringing together Ayurveda’s love for spices and a warm porridge, made all the lighter and fluffier by the use of the ancient grain quinoa.
Ayurvedic Chai Spiced Porridge Recipe Vegan, Gluten Free, Nut Free.
½ Cup Quinoa Flakes
2/3 Cup Coconut Milk
1/2 Cup Water
1/2 Tsp Cinnamon
1/4 Tsp Cardamom
1/4 Tsp Nutmeg
1/4 Tsp Ginger
1 Tsp Honey
1 Tbsp. Tahini
Combine Quinoa Flakes, Cinnamon, Cardamom, Nutmeg, Ginger, Honey and Coconut Milk in a saucepan and simmer, slowing adding and stirring through additional water until you have reached the desired consistency. This will take between 3 – 5 minutes. Set aside.
Slice figs length ways and in a separate pan, simply place face down and grill until tender and lightly spotted.
Pour Porridge mixture into bowl and top with Grilled Peaches and a drizzle of Tahini.
As the Ayurvedic tradition suggests, this meal is best enjoyed in a calm and quiet space where you can eat mindfully and enjoy the full benefits of such a nourishing and healing meal.
